Ingredients for Mustard Roasted Fish:
4 (8-ounce) fish fillets such as red snapper
8 ounces creme fraiche
3 table-spoons Dijon mustard
2 table-spoons minced shallots
1 table-spoon whole-grain mustard
2 tea-spoons drained capers
Freshly ground black pepper
Kosher salt
Method of Preparation (How to Cook):
01.Preheat the oven to 425 degrees F.
02. Line a sheet pan with parchment paper.
03. Put the fish fillets skin side down on the sheet pan.
04. And sprinkle generously with salt and pepper.
05. Mix the creme fraiche, shallots, capers, 2 mustard, 1 teaspoon salt, and 1/2 teaspoon pepper in a small bowl or pot.
06. Spoon the sauce evenly over the fish fillets, and make sure the fish is completely covered.
07. Cook in the oven for 10 to 15 minutes, depending on the thickness of the fish, until it's barely done. (The fish will flake easily at the thickest part when it's done.) Be sure not to overcook it.
08. Spoon the sauce over the top just before serve. And serve hot.
