Bengali Amer Chutny Recipe:

Ingredients of Amer Achar:
   
1/2 kg green mangoes
1 cup sugar/jaggery
2 red chillies whole
3/4 tea spoon panch phoron
2 tsp oil
salt to taste






Method Of Preparation(How to cook):

01. At first cut the green mangoes with the skin into boat shapes.
02. Heat up oil in a pan, mix in 1/2 tea spoon panch phoron and dry red chillies.
03. When they start to crackle mix in the mangoes.
04. Mix in warm water and sugar.
05. Mix in salt when the mangoes are cooked and the syrup is thick.
06. Roast 1/4 tea spoon panch phoron on the tawa and grind it to a powder.
07. After cool the Achar( sprinkle this powder on top.

01. In a Dutch oven, heat oil to 375 degrees F.
02. Fry potatoes until golden brown, roughly 10 minutes removing with a slotted spoon or spider.
03. Hold in low oven to keep warm while cooking the fish.
04. Preheat oven to 225 degrees F,

Method Of Preparation(How to cook) - Bear Battered:

01. In a large bowl, pour in 1 bottle of beer. Sift 1 & 1/2 cups flour into the bowl, whisking in gently until just combined, stir in House Seasoning.
02. Pat fish dry and season on both sides with salt and pepper and coat the fish in the beer batter.
03. Dredge the pieces of fish in 1/2 cup of remaining flour and slide into oil as coated.
04. Fry fish, turning over frequently, until deep golden and cooked through, 4 to 5 minutes.
05. Transfer to a paper towel-lined baking sheet and keep warm in oven.
06. Fry remaining fish in batches, returning oil to 375 degrees F between batches.
07. And serve fish with French fries.

Ingredients Of Salad:

1 lobster, about 1 & 1/4 pounds
2 whole octopus, about 6 pounds each, webbing cut between the tentacles
4 carrots, roughly chopped
2 quarts red wine vinegar
4 Spanish onions, roughly chopped
1 head celery, roughly chopped
3 tble spoon black peppercorns
Handful thyme sprigs
Kosher salt
4 yellow bell peppers, roasted and peeled
1 tble spoon freshly squeezed lemon juice
1 tea spoon smoked paprika
1-2 teaspoons honey
Freshly ground black pepper
1/2 cup coarsely chopped cilantro leaves
1/2 to 1 whole habanero, seeded and finely diced


Ingredients Of Grilled Steak:

2 & 1/2 cups milk
1/2 stick (1/4 cup) unsalted butter, cut into pieces
1/2 cup grated cotija cheese
1 & 1/2 cups white arepa flour.
1/2 tea spoon freshly ground black pepper1 & 1/2 tea spoon kosher salt
1 tble spoon honey
Vegetable or canola oil, for cooking



Method Of Preparation(How To Cook) - Salad:

01. Fill a large pot with 3 gallons water, add the red wine vinegar, onions, carrots, celery, peppercorns and thyme, and bring to a boil.
02. Add the octopus, cover with parchment, and reduce the heat, if necessary to keep the liquid at a simmer. 03. Simmer until quite tender but the tentacles are still attached, about 1 hour.
04. Bring another large pot of water to a boil, salt it generously, and add the lobster.
05. Cook it for 4 minutes and transfer to a bowl of ice water to stop the cooking.
06. Puree the peppers in a blender with the lemon juice, paprika, 1-2 teaspoon honey and some salt and pepper.
07. Cut the tentacles from the octopus and discards the heads. Some of the skin will slough off on its own; don't worry about removing the rest. Chop roughly into bite-sized pieces.
08. Remove the lobster claws and tail from the shell, and cut into bite-sized pieces.
09. Toss the octopus and lobster with enough of the pepper puree to coat lightly.
10. Add the cilantro and habanero and toss again just to combine.





Method Of Preparation(How To Cook) - Arepas:

01. Bring milk to a simmer in a small saucepan, then remove from heat and stir in butter.
02. Combine arepa flour, salt, pepper and cotija in a large bowl. Add the hot milk and honey and stir until combined. Let mixture stand until milk is absorbed enough for a soft dough to form, 1 to 2 minutes.
03. Form the dough into 12 balls (about 2 inches in diameter) and flatten between palms into 3 1/2 to 4-inch patties (about 1/3-inch thick).
04. Heat 2 table spoons of oil in a large nonstick skillet over medium heat until the oil begins to shimmer, fry 4 arepas at a time, until lightly golden brown on both sides and just cooked through about 2 to 3 minutes per side; transfer to a baking sheet lined with paper towels.
05. And slice the arepas in half crosswise, mound some of the salad on the bottom, and top with the other half.

Chopped cilantro, for garnish




Method Of Preparation(How To Cook) - Grilled Steak:

01. At first place garlic, chile, soy sauce, lime juice, honey, and oil in a mini food processor and process until smooth.
02. Now place beef in a small baking dish, pour the marinade over, and turn to coat.
03. Cover and marinate in the refrigerator for 1 hour.
04. Preheat the grill to medium-high.
05. Remove the beef from the marinade and season it with salt and pepper.
06. And grill meat until charred and cooked to medium-rare doneness, about 10 to 12 minutes.
07. After complete it remove from grill and let rest 10 minutes before slicing into 1/4-inch thick slices.


Method Of Preparation(How To Cook) - Papaya Salad:
  
01. In a small bowl, whisk together the shallot, chiles, mint, vinegar, sugar, and fish sauce and set aside.
02. In another bowl, toss the lettuce leaves and watercress together and then arrange the mixture on a platter.

04. Evenly distribute the papaya mixture over the lettuce. Drizzle with a few tablespoons of the dressing.

01. Preheat oven to 325 degrees.
02. Cream butter and shortening; add sugar and beat until mixture is smooth.
03. Add egg yolks one at a time, beating thoroughly after each addition. Combine flour and soda and add to creamed mixture alternately with buttermilk.
04. Stir in vanilla. Add coconut and chopped pecans. Fold in stiffly beaten egg whites. Pour batter into 3 greased and floured 8 inch cake pans. Bake for 25-30 minutes or until cake tests done.

Icing:

01. Blend cream cheese and butter until smooth. Add powdered sugar and water, beating until smooth.
02. Now add vanilla and blend. Spread between layers and top and sides. Sprinkle top with pecans.
03. For more flavor and taste, add coconut and pecans between the layers.
