Ingredients for Aloo Posto:

5 - 6 medium potatoes
2 green chilies
1/2 tea spoon sugar
1 tea spoon pure ghee
2 table spoons mustard oil
4 table spoons poppy seeds (khuskhus)
1/2 tea spoon onion seeds (kalonji)
Salt






Method of Preparation (How to cook):

01. First clean potatoes finely. And cut the potatoes into one inch sized pieces.
02. Keep the pieces potatoes in water.
03. Now soak poppy seeds in one cup warm water for 15 to 20 minutes.
04. Remove poppy seeds from heat and grind to a fine paste.
05. Heat up mustard oil in a pot till it just reaches smoking point.
06. Remove mustard oil from heat. Cool it and heat up the oil again on medium heat.
07. Add in onion seeds (kalonji) and stir-fry briefly.
08. Add in potato pieces and fry on medium heat for five minutes, stirring frequently.
09. Add in the poppy seeds paste, stir and mix in half cup of water, cover and stir fry on low heat up till the potatoes are almost done.
10. Add salt, sugar and slit green chillies depend on your test.
11. Continue to stir fry for a minute more or till potatoes are completely cooked and stir in 1 table spoons ghee
12. And serve it hot.

01: First cut the chicken breasts into 1-inch pieces.
02. Season chicken breast pieces with Thai seasoning and set aside.
03. Now spray a large nonstick skillet with olive oil cooking spray and heat it over medium-high heat.
04. Add seasoned chicken, onion, garlic and mushrooms. Saute until chicken is just cooked, about 8 to 10 minutes.
05. Mix the green beans, chicken stock, coconut milk and lemon zest.
06. Bring to a boil, then reduce heat and simmer until the beans are cooked about 8 minutes, stirring occasionally.
07. Remove from heat and put in a serving bowl.

1 red onion, coarsely chopped

3 ripe mangoes, peeled, pitted, and coarsely chopped
2 cups water
3 tablespoons fresh lime juice
3 tablespoons chopped cilantro leaves

Salt and freshly ground pepper


Ingredients for Grilled Lobster Tails:

1 & 1/2 pound live lobsters (8 pieces)
Olive oil
Salt and freshly ground pepper
16 skewers, soaked in cold water
Green Curry-Mango Sauce, recipe follows
Chopped cilantro leaves, for garnish
Lime wedges, for garnish
4 ounces black caviar, optional 




Method of Preparation (How to Cook):


Green Curry-Mango Sauce:

01. At first heat 2 table spoons oil in a medium saucepan over medium heat.
02. Mix onion and cook until soft, about 3 minutes. Then mix garlic, ginger, and Serrano chili and cook for 1 minute.
03. Now add the curry paste and cook for 2 minutes and add mangoes and water, stir well, and cook it for 15 to 20 minutes or until the mango is soft.
04. Remove it from heat and allow it cool for at least 5-6 minutes.
05. Transfer the mixture to a blender and mix the lime juice, cilantro, and honey and blend it on high speed until smooth and slowly add the remaining 1or 2 cup oil and blend until emulsified. Season with salt and pepper, to taste.

Grilled Lobster Tails:
01. Now boil salted water in a large pot.
02. Add the lobsters and boil it for 12-15 minutes.
03. Preheat the grill to medium-high.
04. Drain the lobsters and put them in a bowl of ice water to stop the cooking.
05. And now drain the lobsters well, remove the tail from the lobster, and carefully remove the tail meat from the shell. Skewer each tail onto 2 skewers so that the meat lies flat.
06. Brush the tails with oil and season with salt and pepper. Grill all the tails for 2 to 3 minutes on both side or until slightly charred.
07. Place the lobster skewers on a platter and drizzle with some of the sauce over top. Sprinkle with chopped cilantro and garnish with lime wedges. Top with dollops of caviar, if desired.
08. Serve the remaining sauce in small bowls for individual dipping.

Method of Preparation ( How to Cook):
01. First put the all bread in the bowl of a food processor and pulse until bread crumbs form.
02. Toast the crumbs in a large, dry nonstick skillet over a medium-high heat until crisp and golden, about 2 minutes. Stirring frequently and breaking up the crumbs with a spoon if they begin to stick together and remove it from heat.
03. Preheat the oven to 400 degrees F. and Spray a baking sheet with olive oil cooking spray.
04. On a plate, combine the flour, salt and pepper.
05. Cut the fillets into 4 by 1-inch strips.
06. A few pieces at a time, dip the fish into the flour mixture, dusting off the excess.
07. And dip the fish in the egg and then the bread crumbs.
08. Arrange on the baking sheet and continue until all of the fish is breaded. Bake until golden and cooked through, about 10 minutes.
09. Now in a small bowl, stir together the yogurt, mayonnaise, mustard, Worcestershire sauce, chives and cayenne, if using. Season, to taste, with freshly ground black pepper.
10. When it ready. Just serve hot with sauce.

04. Now cook the coconut (use fresh or dried) sugar, milk, chopped almonds and raisins, cardamom powder, and poppy seeds (optional) till the milk evaporate.
05. Split the dough into 20-25 sections, roll them out into flat round pancakes.
06. Place a spoon of stuffing at the centre and fold the pancake in half.
07. Use a cutter to create the fluted crescent border and cut off excess dough.
08. Seal the edges by applying a little milk and pressing down hard.
09. After all the karanjis are stuffed, fry them in very hot oil for 2-3 minutes until become golden brown.
10.  Remove it from heat and brings onto paper towels and allow cooling.

1/2 head red-leaf lettuce, torn (about 6 cups)
3 shallots, thinly sliced (about 1/2 cup), divided, for garnish
1/2 cup cilantro leaves, rinsed and dried
1 cup basil leaves, sliced into ribbons



Method of Preparation (How to Cook):

01. First rinse and pat the meat until dry.
02. Place in a sealable plastic bag or small glass dish.
03. In a medium bowl mix 1 table spoon of the lime juice, soy sauce, canola oil, and brown sugar, garlic, and ginger and red curry paste.
04. Pour half the mixture into the bag with the meat.
05. And add the remaining 2 table spoons lime juice to the bag. And seal it tightly.
06. And preserve meat in refrigerator at least 4 hours or overnight. Keep the rest of the mixture refrigerated, to dress the salad.
07. Spray grill pan with cooking spray and preheat. Grill steak until medium-hit, about 5 minutes per side. Let rest until room temperature then slice thinly against the grain.
08. Mix lettuce, sliced shallot, cilantro, basil and beef in a salad bowl, reserving a few shallots for garnish.
09. Add the reserved dressing and toss to coat. Divide salad among 4 plates and garnish with reserved sliced shallots.

04. Using sharp knife, cut through the top shell lengthwise. Remove the meat and cut into 1/2-inch pieces. And set aside.
05. Now in a medium saucepan, bring the chicken stock to a boil. Keep it hot over low heat.
06. In a saucepan, melt 3 tablespoons of butter over medium heat. Cook until the butter begins to foam and then turns brown.
07.  Now add the onion and cook, about 3 minutes. And add the rice and stir to coat with the butter.
08. Add the brandy and simmer until the liquid has almost evaporated, about 3 minutes.
09. Add 1/2 cup of stock and stir until almost completely engrossed, about 2 minutes.
10. Continue adding the stock, 1/2 cup at a time, stirring continuously and allowing each addition of stock to absorb before adding the next.
11. Cook until the rice is tender but still firm to the bite, about 20 minutes.
12. After complete it remove from the heat. Stir in the Parmesan cheese, the remaining butter and 2 table spoons chives. Spice it with salt and pepper, to taste.
13. Transfer the risotto to a large serving bowl.
14. Place the lobster meat on top of the risotto and garnish with the remaining chives.
