Ingredients for Chanar Dalna:

250 gm cubed cottage paneer (cheese)
1 medium cubed potato
1 table spoon ghee
1/4 tea spoon turmeric powder
1 tea spoon ginger paste
2 - 3 green chilies
1 & 1/2 tea spoon cumin seed paste
1/2 cup milk
1/2 tea spoon cumin seeds
1/2 tea spoon sugar
1/2 tea spoon garam masala powder
1 cup water
Salt to taste
Oil for frying 



Method of Preparation (How to Cook):

01. At first heat up oil and fry the potatoes lightly and keep aside.
02. Fry the paneer(cheese) in the same oil and put it in warm water.
03. Now heat up the ghee in a vessel, mix in the cumin seeds.
04. Now add little water, ginger juice and turmeric powder in the cumin paste and mix finely.
05. Stir fry for 2 minutes.
06. Add green chillies, garam masala powder, sugar and salt with potatoes and cover and stir fry till the potatoes are tender.
07. Now take off the paneer (cheese) from the water and mix in to the potatoes.
08. Add milk and the remaining water and allow it to simmer (boil slowly at low temperature) for another 2 to 3 minutes.
09. Remove it from heat and serve hot.

500 gm potatoes
1 kg cauliflower
4 medium tomatoes
2 medium onions
2 bay leaves
1 table spoon red chili powder
1 table spoon cumin powder
1/2 tea spoon garam masala whole
2 table spoon ghee
1 tea spoon turmeric powder
2 table spoon coriander powder
Oil to deep fry
4 table spoon mustard oil



Method of Preparation (How to Cook):

01. First clean potatoes, cauliflower and tomato. Now cut the potatoes and tomato into quarters and cut the cauliflower into medium sized florets.
02. Now heat up oil in a pen and when very hot fry the potatoes lightly and drain and fry the florets of cauliflower till they turn a little brown.
03. Remove potatoes and cauliflower from heat and keep it aside.
04. Now in a pen heat up ghee and add in the bay leaves and the whole garam masala and stir fry for 30 seconds.
05. Add cut onion in ghee and fry until become golden in color.
06. Add the garam masala powders with onion and stir fry for a minute taking care that the masala does not stick to the bottom.
07. Now mix in 1 table spoon of water.
08. Add potatoes, cauliflower and tomatoes with it. And stir fry for a while.
09 Again mix in a cup of water, cover the pen and stir fry over medium heat.. Don’t forget to stir from time to time.
10. After cooked or dry the vegetable remove from heat.
11. Serve it hot.

1 liter Milk
2-3 cup Water
10-12 peppercorns

1 table spoon almonds
Few saffron strands

1 table spoon dried watermelon seeds
1/2 table spoon poppy seeds
1/4 cup fresh rose petals
1/2 cup Sugar 



Method of Preparation (How to Cook):

01. First boil the milk in a pot and allow sometime to cool.
02. Meanwhile soak aniseed, almonds, watermelon seeds, poppy seeds and rose petals in 2 cups of water.
03. Grind finely all the soaked ingredients to make a smooth paste.
04. And pour remaining water into this paste and strain through muslin strainer.
05. Extract the liquid into a vessel and mix the sugar, peppercorns, powdered cardamom, and saffron and mix all finely.
06. Put the mixer in a blender and add milk. Now blend finely.
07. Before serving keep it an hour in refrigerator for chill.

3 cloves garlic, grated or minced
1/4 cup extra-virgin olive oil
1 heart romaine, chopped
1/2 red onion, thinly sliced
8 pepperoncini peppers
2 roasted red peppers, patted dry
1 cup Greek yogurt
1/2 tea spoon ground cumin
1/4 cucumber, peeled and grated
Salt and pepper 



Method of Preparation (How to Cook):

01. First heat the grill pan over medium high heat.
02. Mix the juice and zest of 2 lemons, oregano, parsley, 2 cloves garlic, and olive oil and add fish, turn to coat and season with salt and pepper.
03. Wrap tortillas in foil and place in warm oven or directly on grill to soften and warm through.
04. Shred romaine lettuce and mix with sliced onions.
05. Slice hot peppers and reserve.
06. Now mix red peppers and yogurt in food processor.
07. Add cumin, 1 clove garlic, zest and juice of remaining1 lemon, cucumber and process until smooth, transfer the mixer to a bowl.
08. Grill fish for 6 to 7 minutes until firm and cooked through then cut it into cubes.
09. Serve fish to wrap in soft tortillas with lettuce, onions, hot peppers and sauce.

1 jalapeno, coarsely chopped
1/4 cup chopped fresh cilantro leaves
8 flour tortillas
Shredded white cabbage
Hot sauce
Sour cream
Thinly sliced red onion
Thinly sliced green onion
Chopped cilantro leaves
Pureed Tomato Salsa, recipe follows



Method of Preparation (How to Cook): 

Pured Tomato Salsa:

01. Heat grill or use side burners of the grill.
02. Heat oil in medium saucepan, Mix onions and garlic and cook until soft.
03. Now mix tomatoes, Serrano and jalapeno and cook for 15 to 20 minutes or until tomatoes become soft.
04. Puree the mixture with a hand-held immersion blender until smooth and cook for more 10 to 15 minutes.
05. Mix the hot sauce, oregano, cilantro and lime juice and season with salt and pepper, to taste.
06. After complete keep it aside.

Fish Tacos:

01. Again preheat grill to medium-high heat.
02. Place fish in a medium size dish. And whisk together the oil, lime juice, ancho, jalapeno, and cilantro and pour over the fish. Let marinate for 15-20 minutes.
03. Now remove the fish from the marinade and place into a hot grill, flesh side down.
04. Grill the fish for 4 minutes on the first side and then flip for 30 seconds and remove. Let rest for 5 minutes then flake the fish with a fork.
05. Place the tortillas on the grill and grill for 20 seconds. Divide the fish among the tortillas and garnish with any or all of the garnishes.

1 (12-ounce) can soda water
1 large egg, lightly beaten

Chips:

01. First heat 3 inches of the oil in a deep fryer to 325 degrees F.
02. Clean the potatoes and cut them into chips about the size of your index finger.
03. Put all chips of potatoes in a fryer basket and lower into the oil.
04. Fry the chips for 2 to 3 minutes.
05. Remove the chips from heating oil and keep all to a paper towel-lined platter to drain.

Fish:

01. Crank the oil temperature up to 375 degrees F.
02. In a large mixing bowl, mix the flour, baking powder, salt and pepper. Combine soda water and egg and pour into the flour mixture. Whisk to a smooth batter.
03. Spread the rice flour on a plate.
04. And mix the fish pieces with the rice flour and then dip them into the batter, letting the excess drip off.
05. Put the chips in the bottom of the fryer basket and carefully submerge in the hot oil. Carefully lower the battered fish into the bubbling oil on top of the chips.
06. Fry the fish and chips for 4 to 5 minutes till become crispy and brown.
07. Remove the basket from heat oil and keep the fish and chips on paper towels.
08. Season Fish and Chips lightly with salt.
09. Serve wrapped in a newspaper cone with malt vinegar and/or tartar sauce.

Bengali Chingri (Prawn) Kofta Recipe:

500 gm small prawns (Chingri)
2 large Onions

2 tea spoons garam masala powder
1 tea spoon turmeric powder
Ginger: 1" piece
2 bay leaves
2 table spoons pure ghee
Salt: to taste 



Method of Preparation (How to Cook):

01. At first shell, de-vein and wash the prawns. Then boil them.
02. When cooked, grind to make a smooth paste.
03. Add salt, onions, green chilies and cut coriander leaves into paste. And blend the mixer finely.
04. When the mixture is well blended, form into 12 balls, dip in beaten egg and roll in breadcrumbs.
05. Fry the balls in hot mustard oil till become brown color. When Kofta is ready keep it aside.
06. Extract milk from the coconut. And grind the big size onion, garam masala, turmeric, and ginger to a fine paste for the gravy.
07. Again heat up oil in a saucepan or pot.
08. When it smokes, fry the bay leaves and ground masala for 4 to 5 minutes, stirring all the time and mix little water to keep the spices from scorching.
09. Now gradually stir in the coconut milk extract and a little salt.
10. Mix in the koftas (balls) and allow the curry to simmer (boil slowly at low temperature) for about 10 minutes, till the gravy becomes rich and thick.
11. And add the pure ghee on top just before serving.

1 pound carrots

Method of Preparation (How to Cook):

01. First heat the oven to 450 degrees F and place a rack in a roasting pan.
02. Mix well the butter, chopped garlic, curry paste, 3 tea spoons ginger, the zest of 2 limes and the juice of 1 lime in a bowl.
03. Now season the chicken with salt. Loosen the skin and rub the curry butter underneath. Place skin-side up on the rack and pour about 1/2 cup water into the pan. Roast until the chicken is cooked through and the skin is crisp, 20 - 25 minutes.
04. Now mix the crushed garlic with the remaining 1 teaspoon ginger, the zest of 1 lime and juice of 2 limes. Whisk in the vegetable oil.
05. Shave the carrots into ribbons with a vegetable peeler and toss with the dressing.
06. Mix the cilantro and 1/2 tea spoon salt and toss.
07. And serve the chicken with the carrot-ginger salad.

1/2 kg tomatoes
1/2 kg sugar

01. First clean all the tomatoes finely and cut all into quarters.
02. Soak the tamarind in warm water for few minutes. And take off the pulp of the tamarind, strain and keep it aside.
03. Now prepare sugar syrup of one string consistency.
04. Heat up oil in a pan, add panch phoron and dry red chilies.
05. When it starts to crackle adds the tomatoes and cook for few minutes.
06. Add the sugar syrup along with a little salt, dates and little water.
07. Stir fry till it become dark red in color and thick.
08. Stir and then add the tamarind pulp.
09. Dry roasts the panch phoron and grinds it to a powder.
10. Sprinkle the panch phoron powder over the chutney.

Bengali Dessert Labang Latika Recipe:

2 cup refined flour (maida)
2 table spoons semolina (rava)
1/2 cup milk

3/4 cup sugar (for syrup)
1 cup water
Salt to test



Method of Preparation (How to Cook):

01. At first sieve the flour finely.
02. Add in oil and enough water to knead into firm dough.
O3. Cover it with a damp cloth and keep aside.
04. Bring the ½ cup sugar and water to boil.
05. Boil slowly at low temperature to till sugar enough thick (like syrup).
06. When it’s ready remove from heat and keep aside.
07. Now heat up one tea spoon ghee in a pot and fry it light brown and add in milk, sugar and coconut and keep stirring on a low heat up till it becomes thick.
08. Take off it from heat and add in cardamom powder and nutmeg powder.
09. After cool it and divide into 12 portions. And divide the dough into 12 portions.
10. Roll out one portion into a small latika (like puri)
11. Put a little stuffing in the center and fold the puri like an envelope.
12. Stick a clove in the center to keep it in place.
13. Now again heat up ghee and fry the latikas on medium heat up till become golden brown.
!4. After fry remove from oil and put them immediately in the hot sugar syrup. Keep it on syrup for some time.
15. And remove it from syrup and serve after a couple of hours.
